Directions
- Season beef stew meat with salt and black pepper, then lightly coat with flour.
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Brown the beef in batches until nicely seared on all sides.
- Add onion and cook for 3–4 minutes until softened.
- Stir in tomato paste, garlic powder, and thyme.
- Pour in beef broth and bring to a gentle boil.
- Add carrots and potatoes, then reduce heat to low.
