1. Bake the Pastry Crust

  1. Pulse: In a food processor, pulse the flour, powdered sugar, and salt. Add the cold cubed butter and pulse until the mixture looks like coarse sand.
  2. Bind: Add the egg yolk and ice water. Pulse just until the dough starts to clump together. Gather into a disc, wrap in plastic, and chill for 30 minutes.

  4. Fill: Pour the warm custard directly into your cooled tart shell. Smooth the top with a spatula and let it cool, then refrigerate for 2 hours to set completely.

3. Make the Caramel and Pour

  1. Melt Sugar: In a heavy saucepan, combine the sugar and water over medium-high heat. Swirl the pan occasionally (do not stir) until the sugar dissolves and turns a deep amber color (about 6 to 8 minutes).
  2. Finish Sauce: Reduce heat to low. Whisk in the butter until melted, then slowly pour in the warm heavy cream (it will bubble up violently, so be careful). Stir continuously for 1 minute until silky smooth. Stir in the sea salt if using. Remove from heat and let it cool down for 15 minutes.
