Instructions

 

  1. Toast the Pecans
    • Spread pecan halves on a baking sheet.
    • Bake at 350°F (175°C) for 8–10 minutes, stirring once.
    • Cool completely, then arrange into small clusters (3 pecans each) on a parchment-lined tray.
  2. Melt the Caramel
    • In a microwave-safe bowl, combine unwrapped caramels and heavy cream.
    • Microwave in 30-second bursts, stirring until smooth and pourable.
  3. Add Caramel to Pecans
    • Spoon caramel onto each pecan cluster, ensuring they “stick” together.
    • Allow caramel to partially set (about 10–15 minutes).
  4. Melt the Chocolate
    • Melt chocolate and optional coconut oil in the microwave or double boiler.
    • Stir until glossy and smooth.
  5. Coat with Chocolate
    • Spoon chocolate over each caramel-pecan cluster or dip entirely for a full coating.
  6. Finish & Set
    • Add sea salt or drizzle white chocolate if desired.
    • Refrigerate 30 minutes or until firm.
