🍳 Step-by-Step Instructions

1. Bake the Cake Layers

  1. Preheat: Turn your oven to 350°F (175°C). Grease three 9-inch round cake pans and line the bottoms with parchment paper.
  2. Dry Ingredients: In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Wet Ingredients: Add the eggs, buttermilk, warm water (or coffee), vegetable oil, and vanilla extract directly to the dry ingredients.
  4. Mix: Beat on medium speed with an electric mixer for about 2 minutes until smooth. The batter will look very thin, which is exactly how it should be.
  5. Bake: Divide the batter evenly among the three prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool: Let the cakes cool in their pans for 20 minutes, then turn them out onto wire racks to cool completely before frosting.

2. Whip the Fudge Frosting

  1. Cocoa Base: In a large bowl, beat the softened butter and cocoa powder together until smooth and creamy.
  2. Alternate: Alternately add the powdered sugar and heavy cream in batches, beating on low speed at first, then increasing to high.
  3. Flavour: Add the vanilla extract and a pinch of salt. Beat for 2 full minutes on high speed until the frosting is light, fluffy, and spreadable.

3. Assemble the Layers

  1. Level: If the cakes domed slightly in the oven, use a serrated knife to slice off the tops so they are perfectly flat.
  2. Stack & Fill: Place your first cake layer on a serving platter. Spread a thick, even layer of buttercream over the top. Repeat with the second layer.
  3. Frost: Place the final layer on top. Use a spatula to spread the remaining frosting over the top and sides of the entire cake.

💡 Baker’s Secrets

  • The Coffee Magic: Swapping the warm water for hot brewed coffee will not make the cake taste like coffee. Instead, the heat blooms the cocoa powder, unlocking an incredibly deep, rich chocolate flavor.
  • Chill Before Frosting: Pop your cooled cake layers into the freezer for 20 minutes before assembling. Firm layers are much easier to frost and won’t throw off loose crumbs into your beautiful buttercream.

Would you like to try adding a vintage filling between the layers, like a creamy raspberry compote or a salted caramel drizzle? I can also show you how to make a shiny chocolate ganache to pour over the top.
