Instructions

 

1. Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.

2. Season the chicken breasts with garlic powder, onion powder, paprika, Italian seasoning, salt, and black pepper.

3. Heat the olive oil in a large skillet over medium-high heat and sear the chicken for 2–3 minutes per side until lightly golden. Transfer the chicken to the prepared baking dish.

4. In the same skillet, melt the butter and sauté the mushrooms for 5–6 minutes until tender. Add the garlic and cook for 1 minute.

5. Stir in the chicken broth, heavy cream, sour cream, Dijon mustard, Parmesan cheese, and thyme. Simmer for 3–4 minutes until slightly thickened.

6. Pour the creamy mushroom sauce over the chicken.

7. Sprinkle the mozzarella cheese evenly over the top.

8. Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is melted and lightly golden.

9. Garnish with fresh parsley before serving.
