Step 1: Prepare the Beef Mixture
In a large bowl, combine:
- Ground beef
- Breadcrumbs
- Egg
- Worcestershire sauce
- Garlic powder
- Onion powder
- Smoked paprika
- Salt
- Pepper
- Milk
Mix gently with your hands until just combined. Avoid overmixing because it can make the patties dense and tough.
Step 2: Shape the Hamburger Steaks
Divide the mixture into 6 equal portions and shape them into oval patties about 1/2-inch thick.
Press a small indentation into the center of each patty with your thumb. This helps them cook evenly and prevents puffing.
Step 3: Brown the Patties
Heat oil or butter in a large skillet over medium-high heat.
Cook the hamburger steaks for about 4–5 minutes per side until deeply browned. They do not need to be fully cooked at this stage because they will finish cooking in the gravy.
Transfer the patties to a plate and set aside.

Reduce heat to medium.

Slowly whisk in beef broth until smooth.
Add:

Step 6: Smother the Hamburger Steaks
Return the browned hamburger steaks to the skillet.
Spoon gravy and onions over the top. Cover and simmer on low heat for 15 minutes until the patties are tender and fully cooked.
The gravy will become rich, silky, and deeply flavorful.
