Step 1: Prepare the Cake Layers

  1. Melt Chocolate: In a small saucepan, combine the chopped chocolate and water. Cook over low heat, stirring constantly, until the chocolate is melted and smooth. Remove from heat and let it cool slightly.

  2. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch or 9-inch round cake pans. You can also line the bottoms with parchment paper for easy removal.

  3. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

  4. Cream Butter and Sugar: In a large bowl, using an electric mixer, beat the softened butter until creamy. Gradually add the 2 cups of sugar and beat until light and fluffy, about 3 to 4 minutes.

  5. Add Egg Yolks and Chocolate: Beat in the egg yolks, one at a time, beating well after each addition. Then, beat in the cooled chocolate mixture and the vanilla extract until well combined.

  6. Alternate Wet and Dry: With the mixer on low speed, add the flour mixture in three additions, alternating with the buttermilk in two additions (begin and end with the flour mixture). Mix just until combined after each addition. Do not overmix.

  7. Whip Egg Whites: In a separate clean bowl, beat the 4 egg whites with an electric mixer until stiff peaks form (they should stand straight up when you lift the beaters).

  8. Fold: Gently fold about one-third of the whipped egg whites into the chocolate batter to lighten it. Then, carefully fold in the remaining egg whites until just combined. Do not overmix—the batter should be light and airy.

  9. Bake: Divide the batter evenly among the prepared pans. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

  10. Cool: Let the cakes cool in the pans on a wire rack for 15 minutes. Then, turn them out onto the rack to cool completely.

Step 2: Make the Coconut-Pecan Filling

  1. Combine Base: In a medium, heavy-bottomed saucepan, whisk together the evaporated milk, 1 cup of sugar, and the 3 egg yolks until smooth.

  2. Add Butter: Add the butter pieces.

  3. Cook: Cook over medium heat, stirring constantly (this is crucial to prevent scorching), until the mixture thickens and turns a light caramel color. This will take about 10 to 12 minutes. You’ll know it’s ready when it coats the back of a spoon and a line drawn through it with your finger holds its shape.

  4. Add Flavorings and Mix-ins: Remove from heat immediately. Stir in the vanilla extract, shredded coconut, and toasted pecans.

  5. Cool Completely: Transfer the filling to a bowl and let it cool to room temperature. It will thicken further as it cools.

Step 3: Make the Chocolate Frosting

  1. Cream Butter: In a large bowl, beat the softened butter with an electric mixer until it’s light, pale, and fluffy (about 3 to 5 minutes).

  2. Add Cocoa: Gradually beat in the sifted cocoa powder until well combined. The mixture will look thick and crumbly.

  3. Add Sugar and Cream: Alternately add the powdered sugar and the heavy cream (or milk), beating on low speed to incorporate. Start with about half the sugar, then half the cream, and repeat.

  4. Add Vanilla and Salt: Beat in the vanilla extract and salt.

  5. Whip: Increase the speed to medium-high and beat the frosting for another 2 to 3 minutes until it’s light, fluffy, and spreadable. If it’s too thick, add a teaspoon more of cream; if too thin, add a bit more powdered sugar.

Step 4: Assembly

  1. Level Cakes: If your cake layers have domed tops, use a serrated knife to level them off for even stacking.

  2. First Layer: Place one cake layer on your serving plate. Spread half of the coconut-pecan filling evenly over the top, all the way to the edges.

  3. Second Layer: Place the second cake layer on top. Spread the remaining coconut-pecan filling over this layer.

  4. Third Layer: Place the final cake layer on top.

  5. Frost the Sides and Top: Use the chocolate frosting to generously cover the entire outside of the cake. You can create a smooth finish or rustic swirls.

  6. Decorate (Optional): For a classic look, you can press a few extra toasted pecan halves onto the sides of the frosted cake or arrange them around the top border.
