Instructions
1. Prep the Crust
Preheat oven to 350°F (175°C).
In a bowl, mix crushed crackers with 4 tablespoons of softened butter until well combined.
Press the mixture into the bottom and slightly up the sides of an 8-inch pie dish.
Chill the crust in the refrigerator while preparing the filling.
2. Cook the Onions
In a skillet, melt the remaining 2 tablespoons butter over medium heat.
Add sliced onions and garlic.
Sauté slowly for about 12 minutes, until the onions are soft and golden.
3. Build the Filling
Spread the cooked onions evenly over the chilled crust.
In a separate bowl, whisk together the eggs, milk, salt, and chives.
Pour this mixture over the onions.
Sprinkle the shredded cheddar cheese evenly on top.
Dust with a pinch of paprika.
4. Bake
Bake for 35 minutes, or until the center is set and a knife inserted comes out clean.
Let cool slightly before garnishing with fresh parsley.
Serve warm or at room temperature.
