4 cups frozen hash brown potatoes (thawed)

1 cup cooked ham, diced (or cooked sausage/bacon)

1 cup shredded cheddar cheese (or Monterey Jack)

¼ cup chopped green onion (optional, or swap with diced red bell pepper)

6 large eggs

1 ¼ cups milk (whole or 2%)

½ tsp salt

¼ tsp black pepper

Optional: pinch of garlic powder or paprika
