Ingredients:

  • 1 (28–32 oz) bag frozen shredded hash browns (thawed) OR 5–6 medium potatoes, peeled and grated

  • 2 cups shredded cheddar cheese (sharp or mild—your call!)

  • 1 can (10.5 oz) cream of chicken soup (or mushroom for vegetarian)

  • 1 cup sour cream

  • 1/2 cup melted butter

  • 1/2 small onion, finely chopped (optional but tasty)

  • Salt & pepper to taste

Optional crunchy topping:

  • 1 1/2 cups crushed cornflakes or Ritz crackers

  • 2–3 tbsp melted butter
