  • 1 lb (450g) boneless chicken thighs or breasts, cut into strips or chunks

  • Salt & pepper to taste

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika (optional for color)

  • Oil for frying (vegetable or canola)

Batter:

  • ΒΎ cup (90g) all-purpose flour

  • ΒΌ cup (30g) cornstarch (makes it crispier)

  • 1 teaspoon baking powder

  • 1 egg

  • Β½ cup (120ml) cold sparkling water or cold milk

  • Pinch of salt
