🧺 Ingredients
Crust
- 200 g digestive biscuits (or graham crackers)
- 100 g melted butter
Blueberry Swirl
- 200 g blueberries (fresh or frozen)
- 3 tbsp sugar
- 1 tbsp lemon juice
- 1 tsp cornstarch + 2 tbsp water
Cheesecake Filling
- 600 g cream cheese (room temperature)
- 150 g sugar
- 200 ml heavy cream
- 2 tsp vanilla extract
- 2 eggs (room temperature)

- Whipped cream
- Fresh blueberries
- Mint leaves

1️⃣ Prepare the Crust
- Crush biscuits finely.
- Mix with melted butter.
- Press into the bottom of a lined springform pan (22 cm).
- Chill in fridge for 20 minutes.
2️⃣ Make Blueberry Sauce
- Cook blueberries, sugar, and lemon juice over medium heat (5–7 min).
- Add cornstarch slurry and simmer until thick.
- Cool completely.
3️⃣ Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time.
- Mix in vanilla and cream (do not overbeat).
4️⃣ Assemble
- Pour cheesecake mixture over crust.
- Spoon blueberry sauce on top.
- Swirl gently with a knife for marble effect.
5️⃣ Bake
- Bake at 160°C (320°F) for 50–60 minutes
