🧺 Ingredients

Crust

  • 200 g digestive biscuits (or graham crackers)
  • 100 g melted butter

Blueberry Swirl

  • 200 g blueberries (fresh or frozen)
  • 3 tbsp sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch + 2 tbsp water

Cheesecake Filling

  • 600 g cream cheese (room temperature)
  • 150 g sugar
  • 200 ml heavy cream
  • 2 tsp vanilla extract
  • 2 eggs (room temperature)

Decoration (optional)

  • Whipped cream
  • Fresh blueberries

1️⃣ Prepare the Crust

  1. Crush biscuits finely.
  2. Mix with melted butter.
  3. Press into the bottom of a lined springform pan (22 cm).
  4. Chill in fridge for 20 minutes.

2️⃣ Make Blueberry Sauce

  1. Cook blueberries, sugar, and lemon juice over medium heat (5–7 min).
  2. Add cornstarch slurry and simmer until thick.
  3. Cool completely.

3️⃣ Cheesecake Filling

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time.
  3. Mix in vanilla and cream (do not overbeat).

4️⃣ Assemble

  1. Pour cheesecake mixture over crust.
