Coat the chicken pieces with cornstarch, salt, and pepper.
Heat oil in a large pan over medium-high heat. Fry the chicken until golden and fully cooked. Remove and set aside.
In the same pan, sauté garlic, ginger, and onion until fragrant. Add bell pepper and cook for 2 minutes.
Mix soy sauce, oyster sauce, honey, chili flakes, and water in a small bowl. Pour into the pan.
Return the chicken to the pan and stir well until coated with the sauce.
Add cashews and cook for another 2 minutes.
Garnish with fresh cilantro and serve hot with rice or noodles.
Method
Stir-frying is the main cooking method used for this dish. The chicken is quickly cooked over high heat to keep it juicy while the sauce thickens and coats every piece evenly.
