Step 1: Prepare the crust
In a bowl, mix crushed graham crackers, melted butter, and sugar until the texture looks like wet sand.
Press the mixture firmly into a lined baking pan (9×9 inch) to form an even base. Use the back of a spoon or a glass to compact it well.
Place in the fridge for at least 20–30 minutes to set.
Step 2: Make the filling
In a large bowl, beat the cream cheese until smooth and creamy.
Add powdered sugar and mix until fully combined.
Pour in the lemon juice, lemon zest, and vanilla extract. Mix again until smooth.
In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the cream cheese mixture.
Step 3: Assemble
Spread the creamy lemon mixture evenly over the chilled crust.
Smooth the top using a spatula.
Step 4: Chill
Refrigerate for at least 4 hours (overnight is best) until fully set.
Step 5: Serve
Cut into squares and drizzle with lemon curd or white chocolate for that glossy, irresistible finish.
