1. Cook the Grits
- Boil: Bring water, milk, butter, and a pinch of salt to a boil in a saucepan.
- Whisk: Slowly pour in the grits while whisking constantly to prevent lumps.
- Simmer: Reduce heat to low, cover, and cook for 20 to 25 minutes, stirring occasionally until thick.
- Finish: Remove from heat and stir in the shredded cheddar cheese until completely melted.
2. Fry the Fish
- Season: Pat fish fillets completely dry with paper towels. Season both sides with half of the Cajun spice.
- Dredge: Pour buttermilk into one shallow bowl. In a second bowl, mix cornmeal, flour, and the remaining Cajun seasoning. Dip the fish into the buttermilk, then coat thoroughly in the cornmeal mixture.
- Fry: Heat 1 inch of oil in a heavy skillet (preferably cast iron) to 350°F (175°C). Fry the fillets for 3 to 4 minutes per side until golden brown and crispy. Drain on paper towels.
3. Assemble and Serve
- Spoon a generous amount of hot cheese grits into a shallow bowl.
- Place the hot fried fish directly on top.
- Serve immediately with hot sauce, chopped green onions, or lemon wedges.
