Mediterranean Salmon Spinach Patties

Instructions

 

1. In a large bowl, combine the flaked salmon, spinach, eggs, breadcrumbs, feta cheese, garlic, parsley, dill, lemon zest, lemon juice, oregano, salt, and pepper.

2. Mix until everything is evenly combined.

3. Shape the mixture into 8 equal patties.

4. Heat the olive oil in a large skillet over medium heat.

5. Cook the patties for 4–5 minutes per side, or until golden brown and heated through.

6. If making the yogurt sauce, stir together the Greek yogurt, lemon juice, dill, garlic, salt, and pepper in a small bowl.

7. Serve the warm salmon patties with the yogurt sauce and your favorite side dishes.

 

Tips

– Fresh or canned salmon both work well for this recipe.

– If the mixture feels too wet, add a little more breadcrumbs.

– Chill the patties for 20 minutes before cooking to help them hold their shape.

– Store leftovers in an airtight container in the refrigerator for up to 3 days.
