Ingredients

  • 4–6 fresh ears of corn, husked and cleaned
  • ¼ cup (½ stick) unsalted butter, melted
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (optional, for color and flavor)
  • 2 tablespoons water
  • Fresh parsley or chives for garnish (optional)

How to Make Slow Cooker Corn on the Cob

  1. Prep the Corn: Remove husks and silk from the corn. Trim the ends if needed to fit into your slow cooker.
  2. Season: Brush each ear of corn generously with melted butter. Sprinkle with salt, pepper, and paprika if using.
  3. Layer in Slow Cooker: Arrange the corn in the slow cooker, stacking if necessary. Add 2 tablespoons of water to the bottom to create a bit of steam.
  4. Cook:
    • High: 2 to 2½ hours
    • Low: 4 to 5 hours
The corn should be tender and hot all the way through.
  5. Finish: Brush with additional butter before serving and garnish with chopped parsley or chives for a pop of color.

You Must Know

  • You don’t need foil! The slow cooker traps enough steam to keep the corn juicy and soft.
  • If you prefer a roasted flavor, unwrap the cooked corn and quickly broil it for 2–3 minutes to add light browning.
  • Want it spicy? Add a pinch of cayenne or chili powder to the butter mix.

Topping Variations

  • Parmesan Herb Butter: Mix butter with grated Parmesan, garlic powder, and Italian herbs.
  • Mexican Street Corn (Elote Style): Add mayonnaise, cotija cheese, lime juice, and chili powder.
  • Garlic Lemon Butter: Combine melted butter with minced garlic and a squeeze of lemon juice.
  • Honey Butter: Blend butter with honey and a dash of cinnamon for a sweet twist.

Pro Tips

  • Choose fresh corn with bright green husks and moist silk for the sweetest flavor.
  • Don’t overfill the slow cooker—allow enough space for steam to circulate.
  • Use salted butter if you prefer a richer taste.
  • Keep the corn warm on LOW until ready to serve—ideal for parties or buffets.
