Step-by-Step Instructions:

 

Prep the Halloumi:
· Drain the halloumi from its brine packet.
· Pat it completely dry with paper towels. This is the #1 secret to getting a good sear instead of steaming.
· Slice the block into ¼-inch to ½-inch thick slices or planks.

Heat the Pan:
· Place your dry skillet over medium-high heat. Let it get properly hot for about 1-2 minutes.
· Add the oil and swirl to coat.

Fry to Crispy Perfection:
· Carefully place the halloumi slices in the hot oil. Don’t overcrowd the pan; leave space between them.
· DO NOT TOUCH for 2-3 minutes. Let it develop a deep golden-brown crust.
· Flip with tongs or a spatula. Fry the other side for another 2-3 minutes until golden brown and crispy.

Serve Immediately:
· Transfer to a plate lined with a paper towel for a second to blot any excess oil.
· Squeeze fresh lemon juice generously over the top while still hot.
