- Whole milk, 2 cups (480 ml)

- Bay leaves, 2
- Fresh thyme, 6–8 sprigs (or 2 tsp dried)
- Smoked paprika, 1 tsp
- Black pepper, 1½ tsp, plus more to finish
- Salt, start with 2 tsp and adjust at end

Step-by-step Instructions (detailed)
1) Prep the potatoes (important for texture)
- Cube Carola potatoes evenly (½–¾ inch). Even size = even cooking.
- Place cubes in a bowl of cool water for 5–10 minutes to rinse off surface starch.
- This helps prevent gumminess and keeps cubes distinct.
- Drain well. (No need to dry perfectly.)
Tip: If you want extra distinct cubes, cut slightly larger (¾ inch) and avoid over-stirring later.
2) Cook the bacon (two options)
Option A: Pot method (most flavor in one pot)
- Put pot on medium heat, add diced bacon.
- Cook 8–12 minutes, stirring, until browned.
- Remove bacon with a slotted spoon to a paper-towel plate.
- Leave 2–3 Tbsp bacon fat in the pot. Pour off excess if needed.
Option B: Oven bacon (hands-off, crisp) - Bake on a sheet pan at 200°C / 400°F for 15–20 min, until crisp.
- Reserve 2–3 Tbsp rendered fat if you want, or just use butter/olive oil in the pot.
3) Build the flavor base (sweating the vegetables)
- To the pot (with bacon fat), add:
- Butter (4 Tbsp) and olive oil (1 Tbsp).
- Add diced onion, celery, carrot with a pinch of salt.
- Cook 10–12 minutes on medium-low, stirring occasionally, until vegetables are soft and fragrant.
- Don’t rush. This is where the soup gets “gathering-worthy” flavor.

- but not falling apart completely.
Key: Boiling hard can break potatoes and make texture gluey.
6) Create the “two-texture” signature: blend only part
You want some cubes + a velvety base.
- Turn off heat. Remove bay leaves + thyme stems.
- Use an immersion blender to blend about 30–50% of the soup:
- Blend in short bursts.
- Stop when the base looks creamy but you still have plenty of potato cubes.
Countertop blender method:
Blend 2–3 cups at a time, vent the lid, cover with towel, then return to pot.
7) Add dairy carefully (no curdling, maximum silk)
- Reduce heat to low.
- Stir in milk and heavy cream.
- Warm gently 3–5 minutes. Avoid boiling.
8) Add cheese the right way (smooth, not grainy)
Cheese can get grainy if added when the soup is too hot.
- Turn heat to the lowest setting (or off for 1 minute).
- Add grated cheddar in handfuls, stirring until each addition melts.
- Stir in sour cream until fully incorporated.
If it thickens too much: add a splash of stock or milk.
9) Final seasoning (the “late July” finish)
Taste and adjust:
- Salt (often needs more after cheese)
- Black pepper
- Optional: 1–2 tsp lemon juice (small amount brightens a rich soup)
- Optional: a few dashes hot sauce
