Ingredients
For the Crust
- 2½ cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup cold butter, cubed
- 6–8 tablespoons ice water
For the Filling
- 6–7 apples, peeled and sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- 1½ teaspoons cinnamon
- ¼ teaspoon nutmeg
- 2 tablespoons flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
For the Top
- 1 egg, beaten
- 1 tablespoon sugar
Preparation
Make the Dough
In a bowl, mix flour, salt, and sugar.
Cut in cold butter until crumbly.
Add ice water gradually until dough forms.
Divide into two portions, wrap, and chill for 30 minutes.
Prepare the Filling
In a large bowl, combine sliced apples, sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla.
Mix well to coat the apples evenly.
Assemble the Pie
Preheat oven to 375°F (190°C).
Roll out one portion of dough and place into a 9-inch pie dish.
Add the apple filling.
Roll out the second portion and place on top (full crust or lattice).
Seal edges and cut slits for steam.
Brush with egg wash and sprinkle with sugar.
